On a global level, 40% of the food that is produced goes to waste. In the U.S. alone, that amounts to 100 million tons of food waste every year, which contributes 5% of the U.S. greenhouse gas emissions. The worst part is that a large portion of this food waste goes straight to landfills, where it decomposes and releases methane, a potent greenhouse gas.

At Polyose Bio, we are completely redefining what it means to upcycle food waste. We use synthetic biology to enable a first-of-its-kind pairing between insects and highly engineered microbial cell factories to dramatically reduce the cost and environmental impact of food waste processing and upcycling. Our novel process transforms raw food waste into specialty chemicals such as sugar polymers that sell for hundreds of dollars per kilogram.
